Heavenly Delight


okay so I made up the name. I have no idea what the name of this dessert is and frankly I could care less because it could be named MUD and I would eat it. A friend from our church invited us over and two other families for dinner and she served this for dessert. It was a big hit, even with my kids. I'm not usually big on coconut but this dessert is so tasty that it just wouldn't be the same without it. I've been looking for dessert recipes that are easy to make because as a Pastor's wife my husband likes to invite families over to our house. And usually he will ask me to make a dessert, or he'll pick up a cheesecake from walmart that's already made. So I have been on the hunt! I've also have the desire to become a better cook and a better baker. I asked my friend for the recipe and here it is :

Melt 9 TBSN of butter. combine with 1 1/4 cup flour, 1/2 cup chopped nuts, 1 TBSN of sugar. press into bottom of 13 x9 pan. bake 350 for 15 min. *crust*  Let Cool.

Combine 1 8oz. cream cheese; 1 cup powdered sugar and 1/2 a carton of cool whip. Mix with a beater or wisk until smooth. spread over cool crust.
Prepare one double package of instant vanilla pudding according to package. spread it over the creamcheese spread. Lastly cover with cool whip top with 1 cup of toasted coconut.

Try it with Chocolate pudding! Yummy! (And yes, I meant to capitalize the word Chocolate. Don't you think it deserves it?)

mmm. yes, you can use Chocolate pudding but I wasn't too sure about that one. maybe next time :)
